Vegan substitues

My son in-law at 32 had a heart attack a few days ago. Multiple doctors tell him he must adopt a vegan diet. This is going to be tough for him as he is a self proclaimed meataterian. I know that this is not a real word, but every meal had to have meat, and vegetables were something that he ate only rarely. David was proud to be a meataterianism. Maybe he is not so much now.

So that means that I am researching vegan diets and vegan substitutions. I have been cooking out of the moosewood cookbook which is vegetarian not vegan. There is often milk, cheese and butter in the recipes. I have been using almond milk, olive oil and just skipping the cheese. This worked for the celery and the vegan chili I made, but there are things that we should have a better substitute for. Thus I have placed the link below.
